Ngan is a species of molluscs, with hard shell, living in mud. In vietnamese "ngan" is an adjective the same as tired. And we call venus clams as ngao which mean fed up. We can not understand why our ancestors used these words to name such delicious thing on the earth! But here are dishes we have got from them. Vermicelli fries with ngan is a popular dish along Chanh river area, Quang Yen, Quang Ninh.
The dish is not eye-catching because white noodle is mixed with black ngan, black fungus added, mushrooms, green onions all dark color. Moreover, if you eat ngan for the first time you may not like the dish because the flavor is too strong. But if you encourage yourself to eat again you may not stop eating it.

Cut the noodle to pieces of 5cm, place it in a pan. Knife the ngan for flesh, collecting the water from the shells into a bowl, also place the flesh into it. Ratio ngan vs noodle is 3:5 and if you love ngan make it 5:5. Use your hands to linger the flesh, pushed all sludge out to clean it, pick it out on cutting board for fine chops. Black fungus, mushrooms washed, cut in small. Put in pan on stove, oil to heat aging. Serve hot.
